Chocolate Cupcakes with Chocolate Ganache Frosting

It’s been absolutely crazy…… My college has re-opened and its all back to assignments, debates and test paper. By the time I am back home from college, I hardly have the energy to even lift a frying pan. While I have been struggling to re-adjust to the college schedule, I also felt completely lost and it was not long before that I realised that it was because I have not been baking. Baking is an integral part of my soul and if I stay away from it for a long time, it seems that I have lost a part of my identity. So to redeem my soul and lift my spirits to meet the deadlines for all my pending assignment, I decided to pamper myself with some ambrosia- Extra Large Chocolate Cupcakes with Chocolate Ganache. I unashamedly borrowed the Hershey’s Chocolate Cake recipe and less said the better about how moist and succulent this cupcake is. Try it and you will not ever regret it.

Ingredients

For the Cupcake

2 cups sugar

1-3/4 cups all-purpose flour

3/4 cup HERSHEY’S Cocoa powder

1-1/2 teaspoons baking powder

1-1/2 teaspoons baking soda

1 teaspoon salt

2 eggs

1 cup milk

1/2 cup vegetable oil

2 teaspoons vanilla extract

1 cup boiling water

For the Ganache

100 gms dark chocolate, roughly chopped

100 gms heavy cream

3 tablespoon sugar

Method

For the Cupcake

1. Heat oven to 350°F. Grease and flour two 9-inch round baking pans.

2. Stir together sugar, flour, cocoa, baking powder, baking soda and salt in large bowl. Add eggs, milk, oil and vanilla; beat on medium speed of mixer 2 minutes. Stir in boiling water (batter will be thin). Pour batter into muffin cases.

3. Bake 30 to 35 minutes or until wooden pick inserted in center comes out clean.

For the Ganache

1. Scald the cream in a saucepan.

2. Remove from flame and drop all the chopped chocolate and sugar.

3. Set aside for 5 minutes. Later, stir it all the chocolate has dissolved.

4. Set aside for an hour. After an hour, the mixture should have turned in to a thick spreadable consistency. Pipe it over the cupcakes
