Hot & Sour Vegetable Soup

There are days when we really overeat our lunch and end up feeling stuffed up rest of the day. But then for us feeling stuffed is not an excuse for us to skip a meal :) . We mostly end up having a light soup with lot of roasted croutons.

Sharing a recipe from one of our easy-on-stomach dinner…

Ingredients

1. Chili Sauce- 2 Tbsp

2. Corn Flour- 1 ½ Tbsp

3. Soy Sauce- 1 ½ Tbsp

4. Vinegar- 2 Tbsp

5. Capsicum – 2 Tbsp, chopped

6. Spring Onions – 2 Tbsp , chopped

7. Tomato Sauce- 2 Tbsp

8. Carrots – 2 Tbsp, chopped

9. Cabbage – ¼ Cup, finely chopped

10. Black Pepper Powder- 1 Tsp

11. Ginger- 1 ½ Tsp, grated

12. Sugar- ½ Tsp

13. Salt to taste

14. Water- 4 Cups

15. Croutons- ½ Cup

Method
1. Combine 4 cups of water, chili sauce, soy sauce, vinegar, sugar, salt, ginger and pepper powder and bring the mixture to a boil.

2. Add all the chopped vegetables into the soup. Cook for a minute on medium heat.

3. Dissolve corn starch in 1/2 cup water and add to the soup stirring constantly till it becomes thick.

4. Cook again for a few mins then remove from flame.

5. Add the croutons while serving.
