Tomato Soup

I am recuperating from a very bad chest infection and that means 2 things- First, complete bed rest for 2 weeks :) and second, all the time but very little energy to try some instant health food…

So dont be very surprised when you see that an overweight foodie :) like me is posting all kinds of healthy/diet recipes…

I love tomato, my hubby hates it. I love chocolates, my hubby hate me having it. I love crabs, my hubby hates seeing me have it…and the list goes on. But now that I am sick- I have my way around (short-lived though) and here is my tomato soup recipe.

I strongly advise against the instant soups easily available in the Indian market- it is all right as long as you are not having it as your diet plan. They contain high level of corn starch, which is not so good news while trying to loose weight (oh God, i am preaching???)

You need:

1. Ripest Tomatoes – 2-3 nos

2. Onions- 1/4th cup, finely chopped

3. Garlic- 1 pod, finely chopped

4. Tomato Puree- 1 tsp

5. Vegetable Stock- 1 cup

6. Olive oil- 1 tbsp

This is how you make it:

1. Heat the olive oil in a saucepan.

2. Saute the onion and garlic till the onions are translucent.

3. Add the puree and the stock and let it boil and then simmer on very low flame.

4. Blend this mixture and then sieve.

5. Reheat this mixture.

6. Season with salt & pepper.

I love having my soup with a nicely toasted and slightly buttered slice of bread.
