Spinach Thoran
Of the many types of thoran, Spinach thoran is my favourite.
The best thing that ever happened to Spinach was Popeye who made sure that children would beg for spinach especially the ones that come out of a can.
You need :
1. Spinach (Remove the stalk and chop finely)- 500gms
2. Garlic- 2 pods
3. Onion (Chopped)- 1 small
4. Shallots (Sliced)- 2 nos
5. Coconut (Grated)- 1 cup
6. Green Chilly (Slit)- 1
7. Rice – 1 tbsp
8. Red Chilly Powder- 1/4 tsp
9. Turmeric Powder- 1/4 tsp
10. Curry Leaves- 10 leaves
11. Oil- 1 tbsp
12. Mustard Seeds-1/4 tsp
13. Salt to taste
This is how you make it:
1. Grind- coconut, onion, red chilly powder and garlic with a little water, to a smooth paste.
2. Add spinach and 3 tbsp water to a pan and cover and cook on low heat.
3. When the spinach wilts, add the coconut paste and green chilly.
4. Cover and cook till it is done.
5. In a different pan, pour the oil and add mustard seeds to pop.
6. When the mustard seeds pop, add rice and shallots and fry for 2 minutes. Make sure that you do this on low flame.
7. Add curry leaves and stir for another 1 minutes.
8. Remove from heat and pour this over the cooked spinach.
9. Mix well and serve hot.
Tip: To make it spicier you can add a couple more green chillies.
