Banoffee Pie

This is my all-time favourite dessert. My dear friend Debbie introduced me to this amazing dessert 3 years back and it was love at first taste!! Banoffe pie has been rated as the best pie of all time. It is a combination of toffee and banana and that is where the name comes from. You would find lot of wannabe recipes of banoffee pie like the chocolate banoffee pie and all that. But this recipe is the best and the easiest of all.

You need:

  1. 1 can condensed milk (I use Nestle)
  2. 4 Bananas- thinly sliced
  3. 5 Digestive biscuits (I use to use Mc Vites but now Britannia also has digestive biscuits)
  4. Cream ( I use the nestle cream)
  5. Butter- 50 gms

This is how you make it :

  1. Boil the unopened can in a saucepan for 3-5 hours. This is how you make the caramel. Make sure that the can is always immersed in water and that it is not evaporated off.
  2. Crush the biscuits and mix it with melted butter.
  3. The crushed biscuit mixed with melted butter is the base so press it in to a tray and refrigerate for 20-30 minutes.
  4. Then open the can of condensed milk (which is now toffee) and spread it gently over the base of crushed biscuits.
  5. Arrange the thinly sliced bananas over the toffee.
  6. Whip the cream till it becomes thick and spread over the bananas.
  7. Decorate with grated chocolate (optional).
  8. Refrigerate the pie till it chills.

NB- The can could burst if the water has completely evaporated. The reason you use digestive biscuit is because they dont get soggy when under the toffee. This pie won’t taste the same if you use any other type of biscuit.
